Bodega – colmado are the two concepts with which we believe we can best define Sifón, two terms with echoes of the past, but that are very current in this revival of the traditional that we are going through, especially in the hospitality sector.

A wink and tribute to the traditional commerce of Madrid, in which in other times there were many establishments such as grocery stores, groceries, wine cellars, bread bakeries… and that evoke proximity, quality, care and dedication.

And what better way to pay this tribute than to baptize it with the name of an object that is unequivocally linked to the bar of a lifetime: the siphon. This is the name given to the airtight container that held carbonated water, also called seltzer, soda, soda pop, etc. In Spain, carbonated water was called siphon when it was served from this container, which today has become almost a cult and collector’s item.

The colmados are also in many places those small stores full of items for sale, crowded on the shelves and of different genre. Here too we are faced with a meaning that fits perfectly, because Sifón is a small and crowded place with merchandise, although comfortable and ideal for chatting and relaxing.

In short, a new establishment specializing in “gourmet” items, both to take away and to consume on-site, in which we pay special attention to artisanal products from Madrid. And all this in one of the most secluded and unknown squares of Madrid, the wonderful Plaza del Rey in the neighborhood of Chueca. With a spectacular terrace to enjoy all year round. And a loyal and cosmopolitan public, amateurs of wines and good living, of all ages and backgrounds. Because at Sifón everyone is welcome.
